Here's a sweet savory snack, crunchy karanji or ghujiya; usually made on festive occasions. But we don't need occasions to have this delicacy. We can enjoy it anytime, kids love to take them at school snack. So let's get started.
For karanji dough we need-
- 2 cups all purpose flour.
- 2 tbsp semolina/ suji
- 1/2 cup milk.
- 1/2 teaspoon salt.
For the stuffing-
- 1 cup dry coconut powder.
- 1/2 cup semolina/ suji.
- 1 cup powdered sugar.
- 1/2 cup raisins and chopped almonds.
- Cardamom powder.
Step 1- Kneed the all purpose flour and semolina with milk and some water into a semi soft dough and set aside.
Step 2- Roast the semolina and dry coconut on low flame for few minutes. Add raisins almonds sugar and Cardamom powder and set aside to cool.
Step 3- Divide the dough into small balls and roll them into small circle. Put a spoon full of the filling in the center of the circle and fold it into semicircle. Seal the edges with drop of milk.
Step 4- Press the tip of a fork at the edges of this semi circular karanji.
Cool and enjoy these crunchy karanjis.
