Dahi Alu Baingan Saalan.

 


If you are an Eggplant lover here's a simple receipy on Dahi Alu-Baingan Saalan. You can enjoy it with Rice, Paratha or Naan.

So, what do we need?

  • One long eggplant, diced.
  • One medium size potato, diced.
  • Half cup peas.
  • One medium onion, sliced.
  • 1 tbsp sesame seeds.
  • 1 tbsp dry coconut powder.
  • 1 tbsp peanuts.
  • 1/2 cup beatened yogurt.

Spices:

  • Turmeric powder.
  • Garam masala.
  • Coriander powder.
  • Cumin powder.
  • Red chilli powder .
  • Salt.

Step 1. Dry roast sesame seeds, dry coconut powder and peanuts on a slow flame.  Grind it in mixer adding little water to form a paste.
Step 2. Shallow fry the diced Eggplant and potatoes and keep aside on paper towel.
Step 3. Cooking-
In a pan heat 2 tbsp oil adding cumin seeds, mustard seeds, green chillies and curry leaves. To this add the sliced onions till golden brown and add 1 tbsp ginger garlic paste.
Add the spices mentioned above and cook for few minutes.
It's time to add the ground sesame, coconut and peanut paste and cook for 5 minutes on a medium flame, covered with the lid.
Add beatened yogurt, peas, half cup water and cook for another 10 minutes.
Finally, add the fried eggplant and potato dices. Give it a final 10 minutes cook and you have your Dahi Alu-Baingan Saalan ready.
