Baked Veggie Rolls


Here's a very simple receipy to make  veggie Rolls.  You may add your favorite vegetables in the rolls.

So let's get started!

Ingredients required for veggie rolls:
  • Bell peppers.
  • Tomato.
  • Corns.
  • Grated cheese and 1 tbsp smooth cheese spread.
  • Black pepper,salt, chilli flakes.
  • Pizza dough. (For pizza dough we mix all purpose flour, instant yeast, oil, sugar and salt)


Step 1- Add together the vegetables with cheese spread and grated cheese and add salt, chilli flakes and black pepper.


Step 2- Roll the pizza dough thin, into a rectangular shape and spread the veggies all over it leaving an inch at the edges. Spread some grated cheese over the veggies.


Step 3- Start rolling this veggie base carefully.


Seal the edges well and see that it does not open up.


Step 3- cut and divide the rolls in equal portions. (Tip: put some dry flour on the knife so that it doesn't stick to the rolls)


Step 4- Spray some cooking oil on the baking tray and place the rolls on them. 


(I waited for an hour so that the rolls rise.)


Step 5- Bake the rolls at preheated oven at 400 degree F for 20 minutes. 


Serve hot with mint sauce or tomato ketchup.

Pan Fried Chicken Tandoori

 

Here is a simple and quick receipy of making your favorite chicken tandoori using simple ingredients and cooking it on a fry pan.

So what all do we need?


  • 2 teaspoon Tandoori Chicken Masala.

(If you do not have tandoori masala, you may combine and use coriander powder, turmeric powder, chilli powder, garam masala and cumin powder.)
  • 1 teaspoon Kashmiri red chilli powder for color.
  • Half lemon juice.
  • Salt to taste.
  • 1 tbsp Olive oil.
  • One tbsp ginger garlic paste.
  • 2 tbsp plain yogurt. 
 Step 1 - Mix the above ingredients to form        thick paste of the marination. 

 Step 2- Slit the chicken breast in half and coat the marination all over it.



 Slit the chicken breast from the sides.


Flip the chicken and coat the other side too.


Keep this marinated chicken covered, for 2 hours in refrigerator.

Step 3 - After 2 hours, remove the marinated chicken from refrigerator and heat little olive oil in a fry pan or flat kadai. For best results we could use a grill pan.


Place the chicken breast on the pan on medium to high flame and cook one side for 7 to 10 minutes.
Sprinkle some black pepper powder on the chicken.

Flip the chicken and fry the other side for another 7 to 10 minutes.


Cut the already slited  chicken into pieces. And continue cooking on both sides.


Finally, garnish the tandoori chicken pieces with some cilantro and serve hot with Naan.

Karanji - Sweet Savory Snack

                              




Here's a sweet savory snack, crunchy karanji or ghujiya; usually made on festive occasions. But we don't need occasions to have this delicacy. We can enjoy it anytime, kids love to take them at school snack. So let's get started.

For karanji dough we need-

  • 2 cups all purpose flour.
  • 2 tbsp semolina/ suji
  • 1/2 cup milk.
  • 1/2 teaspoon salt.

For the stuffing-

  • 1 cup dry coconut powder.
  • 1/2 cup semolina/ suji.
  • 1 cup powdered sugar.
  • 1/2 cup raisins and chopped almonds.
  • Cardamom powder.

Step 1- Kneed the all purpose flour and semolina with milk and some water into a semi soft dough and set aside.

Step 2- Roast the semolina and dry coconut on low flame for few minutes. Add raisins almonds sugar and Cardamom powder and set aside to cool.


Step 3- Divide the dough into small balls and roll them into small circle. Put a spoon full of the filling in the center of the circle and fold it into semicircle. Seal the edges with drop of milk.

Step 4- Press the tip of a fork at  the edges of this semi circular karanji.



Step 5- Heat oil in a wok and fry these karanjis on medium heat till they are golden colour and drain on absorbent paper.
Cool and enjoy these crunchy karanjis.


Cheesy Spinach Corn Loaded Bread.


















Tired of the regular food? Wanna try something different. Let's bake Cheesy Spinach-corn loaded bread.

So what do we need?

For the dough:

  • 1.5 cup all purpose flour.
  • One sachet instant pizza yeast.
  • I teaspoon sugar.
  • 1/2 teaspoon salt.
  • Some oil.
  • Warm water.

For filling:

  • 1 cup spinach.
  • 1/2 cup corns.
  • Grated mozarella cheese.
  • 2 tbsp cheese spread.
  • Oregano.
  • Chilli flakes.
  • Black pepper.
  • Salt to taste.


Lets get started!

Step 1- Kneed the dough with the all purpose flour combining it with yeast, sugar, salt, warm water and some oil. Make a soft dough and keep aside for few minutes.

Step 2- In a bowl, mix spinach and corn with the cheese spread. Add salt, oregano,black pepper and chilli flakes. Add grated cheese to this mixture.

Step 3- Roll 1/3 of the dough into a rectangular shape base (u can make any shape as you like)
Over this base, spread the spinach mixture.


Step 4: Kneed the other 1/3 portion of the dough into similar rectangular shape to cover this filling and seal from edges.





Step 5: Spread some grated cheese over this sealed bread. Sprinkle with some chilli flakes and oregano.


Step 6: With the remaining dough, kneed it thin and  cut into stripes. Twist the stripes as shown in the below and place it over the cheese in horizontal and vertical lines.



In a preheated oven, bake at 400 degree for 20 minutes.
Enjoy this Cheesy Spinach- Corn loaded bread with tomato ketchup.

Cheesy Paneer Spinach  Cup Cakes




Ingredients:

For Dough-

  • 1.5 cups all purpose flour.
  • 1 sachet instant pizza yeast.
  • 1/2 teaspoon salt.
  • 1 teaspoon sugar.
  • Some oil.
  • Water.

For Filling-

  • I cup Grated Cottage cheese or Paneer.
  • 1 cup spinach.
  • 2 tbsp corns.
  • 1 small onion.
  • 1/2 cup Grated Mozarella Cheese.
  • 1 tbsp Cheese Spread.

Spices-

  • Chilli flakes.
  • Salt.
  • Black pepper.
  • Oregano.
  • Cumin powder (optional).

Step 1- Let's get started by kneeding together the all purpose flour, yeast, salt, sugar and oil in lukewarm water- into a soft pizza dough. Keep aside for 30 minutes in a warm place covered wit a lid.

Step 2- For the filling we mix together finely chopped spinach, grated cottage cheese or Paneer, corns, chopped onion; combined with the cheese spread and grated mozarella cheese. Add the above mentioned spices and mix well.

Step 3- roll the dough and with the help of round cookie cutter give circular shapes to the dough. Grease the cup cake baking tray with oil spray and place the circular dough in the mould.

Fill these cup cakes base with the cheesy vegetables filling.

Add grated mozarella cheese over the filling.
Cut thin stripes of the leftover dough and placed it on cupcakes, sprinkled with some sesame seeds on top.

Finally, preheat oven at 400 degree F and bake for 20 minutes.



Enjoy this cheesy meal with ketchup and mint sauce.





Dahi Alu Baingan Saalan.

 


If you are an Eggplant lover here's a simple receipy on Dahi Alu-Baingan Saalan. You can enjoy it with Rice, Paratha or Naan.

So, what do we need?

  • One long eggplant, diced.
  • One medium size potato, diced.
  • Half cup peas.
  • One medium onion, sliced.
  • 1 tbsp sesame seeds.
  • 1 tbsp dry coconut powder.
  • 1 tbsp peanuts.
  • 1/2 cup beatened yogurt.

Spices:

  • Turmeric powder.
  • Garam masala.
  • Coriander powder.
  • Cumin powder.
  • Red chilli powder .
  • Salt.

Step 1. Dry roast sesame seeds, dry coconut powder and peanuts on a slow flame.  Grind it in mixer adding little water to form a paste.
Step 2. Shallow fry the diced Eggplant and potatoes and keep aside on paper towel.
Step 3. Cooking-
In a pan heat 2 tbsp oil adding cumin seeds, mustard seeds, green chillies and curry leaves. To this add the sliced onions till golden brown and add 1 tbsp ginger garlic paste.
Add the spices mentioned above and cook for few minutes.
It's time to add the ground sesame, coconut and peanut paste and cook for 5 minutes on a medium flame, covered with the lid.
Add beatened yogurt, peas, half cup water and cook for another 10 minutes.
Finally, add the fried eggplant and potato dices. Give it a final 10 minutes cook and you have your Dahi Alu-Baingan Saalan ready.
